About the role

YMS by onefifteen is a lifestyle retreat in Yangmingshan offering two distinctive fine‑dining concepts. The Senior Sous Chef / Sous Chef will support the Executive Chef in daily kitchen operations, ensuring the highest standards of quality, consistency and efficiency in a high‑end restaurant environment.

Key responsibilities

• Assist the Executive Chef in managing daily kitchen workflow, from mise en place to service execution.
• Lead, train and mentor the kitchen team, fostering a disciplined and growth‑oriented culture.
• Maintain food quality, plating standards and consistency across all dishes.
• Oversee food safety, hygiene and regulatory compliance throughout the kitchen.
• Control food costs, inventory and waste while preserving quality.
• Collaborate on menu development, seasonal adjustments and continuous improvement.
• Communicate effectively with the Front‑of‑House team to ensure a seamless guest experience.
• Take full responsibility for kitchen operations and decision‑making in the Executive Chef’s absence.

Required profile

• 7–10+ years of fine‑dining experience, including 2–3 years as a Sous Chef; Michelin‑starred or equivalent background preferred.
• Progressive culinary career from Commis to Sous Chef with at least 1–2 years of supervisory experience at each level.
• Strong culinary fundamentals and advanced fine‑dining techniques.
• Excellent written and spoken English communication skills.
• Proven leadership, adaptability and ability to work under pressure.
• Formal culinary training or equivalent professional kitchen experience.
